Mexican Fiesta

I’m across the ocean and in Mexico at the moment!  I am here working on my dissertation for my final year of university, and what a wonderful place to do it.  I am mid-way through my third week, and have learnt so much already.  I became qualified as a scuba diver, passed a reef ecology course and made lots of new friends.  I have now started collecting data for my research on lagoon water quality.

Before I came here, I read about a bakery nearby that was highly recommended.  Imagine my luck!  It was the first place I visited when I arrived and it is so lovely!  The cakes are so soft and the homemade ice-creams are delicious.  They even have tasty smoothies, my favourite being the chaya.  So, I have been tasting a few of their cakes while I’ve been here, naturally.

The cakes are all lovely, although we definitely do carrot cake better at home!  Their best is their banana bread and their strawberry cake in my opinion.

What a fantastic place!  And tonight I am going out with my new friends to join in 4th July celebrations with the Americans among us – can’t wait!
