I decided to go for a walk today in the sunshine, but of course it began to snow really heavily as I was half way through my route…typical Scotland.
Thankfully I had some peanut butter cookies to come home to!
I do wish I had put a little white chocolate in these now, but I’ll remember that for next time.
200g plain flour
110g unsalted butter
110g light brown sugar
100g caster sugar
1 large egg
1/2 tsp bicarbonate of soda
1/2 tsp salt
1/2 tsp vanilla extract
Jar of crunchy peanut butter
Preheat your oven to 180C (160C fan oven)
Cream the butter and sugars until very smooth. Add the egg and beat slowly until combined. Add the peanut butter and vanilla extract and mix. Finally add your flour, bicarbonate of soda and salt, mixing only until the mixture becomes a dough.
Roll your dough into small balls about an inch wide. Put them on a baking tray line with greaseproof paper and flatten each ball slightly with a fork. Bake in the oven for about 15 minutes.
Cool on a wire rack.
