Cake Ice-Cream!

Today was a rare day. Firstly it has been warm in Edinburgh for the past few days – incredible! So this morning, the first task was to return to Mimi’s Picnic Parlour (my old workplace) and design a chalkboard specials menu for the new season. Creative output for the day complete! I even got a free mango and coconut smoothie for keeps; happy girl. After running late with the chalkboard extravaganza I met Josh (aka best friend) for lunch at a bar in town (my other old workplace). On the way there I ran into my boss (of my current workplace) and then quickly returned some heavy textbooks to the biomedical school (where the medieval society were enacting some moody fake smoke infused scene in front of the giant elephant skeletons in the hallway – cue me getting in the way). Anyway after lunch Josh and I returned to Mimi’s for quite frankly some of the most stylish ice-cream in Edinburgh, and sat out in the rare Scottish sun. I am so pale.

Mimi’s cake is combined with the delectable St. Luca’s ice-cream in Edinburgh and served up through the window in the Picnic Parlour. My favourite has always been the Coconut Jam Slice, but today, I had to go for the Mint Aero Slice in honour of my favourite Mimi’s cake. Josh had the Red Velvet ice-cream (and eat it really fast without getting brain-freeze somehow…). Other flavours are Victoria Sponge Cake, Caramel Shortbread, and Banana and Caramel. Oh and sometimes they have Rocky Road. I’m sure I’m forgetting some.

I can’t really explain my obsession with mint at the moment. Yet I don’t like chocolate ice-cream, so this mint ice-cream is really just perfect for me (none of this mint-choc chip nonsense). After ice-cream I lounged about for a good few hours before reluctantly walking back up one of the many hills in Edinburgh to put myself through a brutal spin class. Well I’m glad I went because I feel so good for it! It’s been a while since I’ve gone, but I feel happier and less stressed. But to finish off this great little day…avocado! Yep I couldn’t help myself, I popped into the supermarket on the way home then mashed me some guacamole. And now I am ridiculously sleepy.

So I hope you all had a lovely Easter. I recommend spin class. But I also recommend cake ice-cream (because spin class just about makes it okay).
