Ever since my three best girlfriends disappeared out of the country to go and live their exciting lives (weddings, world travelling, and turtle saving…) I have had a serious lack of good girls nights out in Edinburgh. Don’t get me wrong, my friends here are the most incredible people and I’ve had some of the best times with them, I just can’t ask James and Josh to help me pick an outfit or tell me honestly if my bum looks big in a dress (although they try their best). And the few girlfriends I have here aren’t single anymore, so they’re often busy with their other halves (lucky ladies!).
But this weekend was a different story! Two friends from my class were up for a night out – a REAL girls night out. What does that entail? A lot of time spent getting ready, which involves drinking whatever is leftover from the last flat party and indulging in some brilliant stories. And dancing, lots of dancing.
So I made cupcakes obviously. Strawberry daiquiri cupcakes specifically. And they were goooood.
These are a Hummingbird Bakery recipe, tweaked ever so slightly. Where Hummingbird recommend making these as mini cupcakes, I preferred to go all out and make them full size! I also decided to distribute the strawberries throughout the entire cake rather than just at the bottom as the recipe suggests. To do this I tossed the chopped strawberry pieces in flour first and then mixed them into the cake mixture just before spooning into the cases (coasting the strawberries in flour stops the fruit from sinking to the bottom of the cake during baking).
The flavours in these cakes are really complementary. The rum I used was very coconutty as well which added a lovely tropical flavour to the strawberry lime cupcakes. The girls loved them!
As for the night out, I have no scandals to report….just some really good memories!
